Lettuce that is bolting begins to elongate and grow rapidly vertical. You can identify this process by slicing open a head or plant of lettuce and noting if the growing crown in the center is taking on a cone shape. If it is, the lettuce is bolting and will soon turn bitter. Harvest your plants and put in some new ones. I like to plant new seeds every three weeks throughout the summer in order to have a continuous harvest right till frost.
